Winter Slaw and Orange Cranberry Bread make the season cozy

Sure, we understand that preparing a pomegranate can be a bit daunting. But this Winter Slaw recipe from WIC Kitchen is such a great addition to a holiday table and we have a hack for you: Soaking the pomegranates in cold water for about five minutes makes it easy to extract the seeds.
And adding the Orange Cranberry Bread will fill your home with festive and zesty scents and provide two new healthy dishes to your menu.
After all, oranges are high in vitamin C, fiber and folate, which support immune system health, digestion and also help to stabilize blood sugar. Cranberries are rich in antioxidants, which protect against inflammation, promote urinary tract health and help improve cholesterol levels. They also contain vitamin E, which supports skin health and protects cells from damage.
The kale in the Winter Slaw helps lower the risk of type 2 diabetes, protects against heart disease and helps prevent constipation. Like cranberries, Brussels sprouts are rich in antioxidants and contain anti-cancer compounds. They also support heart and gut health, as well as reduce the risk of developing type 2 diabetes.
The savory slaw makes a great side dish for a holiday dinner, while the Orange Cranberry
Bread makes a tasty day-of breakfast for the family.
You could even make it the day before and heat it up in the morning. That way, you can also leave some out for Santa!
Orange Cranberry Bread
Ingredients
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup sugar
Zest of three large oranges
3/4 cup buttermilk
1/2 cup oil
2 eggs
1 tablespoon orange juice fresh
1/2 teaspoon vanilla extract
1 cup fresh cranberries chopped or halved
Directions
Preheat oven to 350 degrees and line a loaf pan with parchment or grease it well.
Combine flour, salt, baking powder and sugar in a bowl. Set aside.
In a large bowl, whisk together orange zest, buttermilk, oil, eggs, orange juice and vanilla.
Slowly add the dry ingredients into the wet ingredients and gently fold together. Just before it is combined, add in cranberries and stir JUST until combined.
Pour into prepared pan and bake for about an hour, or until an inserted knife comes out clean.
Winter Slaw
Ingredients
4 tsp lemon juice
2 tbsp dijon mustard
4 tbsp olive oil
1 ½ tsp kosher salt
¼ tsp black pepper
½ small bunch curly green kale, thinly sliced
12 oz Brussels sprouts, trimmed and sliced
4 cup toasted almonds, roughly chopped
¼ cup pomegranate seeds
¼ cup grated parmesan cheese
Directions
In a small bowl, whisk together the lemon juice, mustard, olive oil, salt and pepper.
In a large bowl, combine the kale, Brussels sprouts, almonds and pomegranate seeds. Add the dressing and toss to coat. Just before serving, top the salad with parmesan cheese.
